Are you looking for a fresh and tasty recipe? Try the barley salad with anchovies, shrimps and tomatoes, an easy and quick dish. Let’s see how to do! We’ll need:
• 1 ½ cups (300 g) of pearl barley
• 7 oz (200 g) of shrimps
• 5,3 oz (150 g) of cherry tomatoes
• 8 fillets of anchovy in oil • 5 tbsp of extra virgin olive oil
• ground black pepper
• A few basil leaves
First of all, boil the barley in 3 pints (1 ½ lt) of boiling salted water.
In the meantime, wash the tomatoes and cut into small pieces.
In a pan, put the extra virgin olive oil and let the anchovies melt; then add the shelled shrimps, let them brown and gain flavor.
When the barley is cooked, drain and toss in the pan with the other ingredients.
Now remove from the heat, let it cool, then add the tomatoes, a sprinkle of black pepper and salt to taste. Stir well, and finally add the roughly chopped basil leaves.
